Mama Mandola’s Sicilian Chicken Soup

This authentic Italian soup was created by Damian Mandola, the founder. This chicken soup is special because it has a hint of spicy heat. This soup may become your favorite comfort food.

Pollo Rosa Maria

This is a great chicken recipe. The chicken breast is grilled on a wood-fire grill and served with thinly sliced prosciutto, sauteed mushrooms and creamy fontina. The dish is finished off with a basil lemon butter glaze. This dish would be great with white wine.

Shrimp & Scallop Linguine Alla Vodka

Nothing can beat the creamy flavor of well-made tomato vodka sauce. This recipe is balanced with tender sauteed scallops and shrimp. This pasta dish is light enough to be saved for dessert.

Prosciutto Arugula Wood Fired Pizza

Carrabba’s wood-fired pizzas are a great option if you’re visiting for the first time. Although you can make your own combinations from the many toppings available, this pizza is already balanced in flavor.

Carrabba’s history

Johnny Charles Carrabba III, and his uncle Damian Mandola, opened the first Carrabba’s restaurant in Houston, Texas, in 1986. In Houston, a second location was opened the same year. The restaurant’s menu was based on recipes that were passed down from the family, especially Grace and Rose, Damian’s mother and sister.

By 1993, the restaurant was a major regional chain, with most of its locations in Florida. Bloomin’ brands, then Outback Steakhouse, Inc., invested in expanding the business. Carrabba’s Italian Grill had 232 locations by 2011, although the majority were still located in the Southeast.

Carrabba’s family recipes are still the core of the restaurant’s menu. Many of these recipes were featured on , a PBS program called Cucina Sicilia hosted by Johnny and Damian.
